Makes 9 – 12 bars
- 1 1/2 C roasted peanuts (or almonds)
- 1 tsp cinnamon
- 1/4 tsp salt (if your peanuts aren’t salted)
- 5 Tbsp liquid honey
- 1 tsp vanilla extract
- 1 C puffed amaranth (or normal amaranth cooked lightly in a wok until golden and fragrant)
- 1 Tbsp coconut oil (melted)
Mix peanuts in food processor to break up. Then add cinnamon and salt. Pulse until mixture starts to clump together. Add honey, vanilla and melted coconut oil. Pulse to mix all ingredients.
Transfer mix to a large bowl and add 1 C of amaranth. Mix by hand to incorporate amaranth well into the mixture.
Press mixture into a 20cm by 20cm dish. Freeze for at least 10 minutes. Keep in freezer as an easy snack.
